Ingredients You Need

Labeled ingredients for stuffed mushroom on a grey colored surface.
  • Mushrooms: I suggest going with baby bella or cremini mushrooms – their natural hollow shape is perfect for stuffing, and their subtle flavor pairs wonderfully with the creamy filling. Youโ€™ll need about 26 mushrooms for this recipe.
  • Cream cheese: Acts as the binder for the filling, giving it a creamy, velvety texture. I use Philadelphia cream cheese, but you can use any brand you like.
  • Cheddar cheese: For that melty, cheesy goodness! Freshly-shredded cheese is best for the best melt.
  • Red bell pepper: Adds a nice color contrast, a bit of crunch, and a subtle sweetness that complements the savory ingredients.
  • Parsley: For freshness. I love the pretty little specks of green on the filling from the parsley!
  • Garlic and onion powder

Step-By-Step Instructions

Make these crave-worthy stuffed mushrooms with just 10 minutes of prep and 5 minutes of cook time – simply prep the mushrooms, stuff them with the creamy filling, and let your air fryer do the rest. Super easy for an appetizer that looks and tastes gourmet, but takes just minutes to whip up!

Step 1: Prep the mushrooms

Gently remove the stems from the mushrooms and wipe the caps clean with a damp paper towel. Set aside.

Step 2: Make and add the filling

In a medium bowl, mix the softened cream cheese, cheddar cheese, chopped red bell pepper, parsley, garlic powder, and onion powder until well combined.

Scoop the filling into the mushroom caps using a spoon. Fill generously with a slightly rounded portion on top but not too much to prevent spilling in the air fryer.

Step 3: Air fry

Spray the air fryer basket with oil to avoid sticking. Arrange the mushrooms in a single layer in the basket. You may need to cook them in batches, depending on the size of your air fryer.

Itโ€™s important to note that air fryers are not all created equally – I have two different air fryers and this recipe cooks slightly faster in one versus the other. Keep an eye on the stuffed mushrooms after the first few minutes to avoid burnt mushrooms!

Air fry for 5 to 7 minutes in a preheated machine set to 350 F. The filling will be golden brown on top, and the mushrooms will be tender when done.

Step 4: Serve

Carefully remove the mushrooms from the air fryer and serve immediately.

Substitutions

Ran out of something or want to mix things up? Feel free to swap ingredients with what you already have in your kitchen! Here are some simple substitutions to try:

  • Mushrooms: I highly recommend using baby bella or cremini mushrooms for this recipe because they give the best flavor. If unavailable, white button mushrooms will work in a pinch.
  • Cream cheese: Swap it out with ricotta for a milder flavor.
  • Cheddar cheese: Substitute with any melty cheese you have on hand! Mozzarella, Monterey Jack, or Gouda are ideal options.
  • Red bell pepper: Replace with green bell pepper.
  • Parsley: Use fresh rosemary, thyme, basil, or chives to substitute or add to parsley. Dried herbs work in a pinch if fresh ones arenโ€™t available.
  • Garlic and onion powder: Prefer a stronger garlic or onion flavor? Use fresh or roasted minced garlic and minced green onions or shallots in place of the powders.

Expert Tips

  • Cook in batches: Avoid overcrowding your air fryer basket for the best results. Arrange the mushrooms in a single layer with a bit of space between each piece. Work in batches if needed.
  • Choose fresh mushrooms: Fresh mushrooms hold up better when stuffed, giving you that tender, slightly chewy bite. Choose mushrooms with firm, unblemished caps. Size also matters – creminis are perfect for a bite-sized appetizer, while portobello mushrooms are ideal for a bigger serving.
  • Add mix-ins: Get creative with your stuffing by adding in some tasty mix-ins like crumbled bacon, crab bits, sautรฉed spinach, or finely chopped nuts for extra flavor and texture!
  • Add a crunchy topping: For a bit of texture and a satisfying crunch, top the stuffed mushrooms with some panko breadcrumbs, crushed crackers, or parmesan cheese before baking.
  • Donโ€™t overstuff: While you want to load up on the creamy filling, be mindful not to overstuff the mushrooms. You want them to bake evenly and not spill over.
  • Use extra filling: If you have leftover filling, use it as a dip for crackers, cucumber slices, and crostini. It also makes a lovely addition to scrambled eggs, omelets, or rice.

How to Store This Recipe

Air fryer stuffed mushrooms are best enjoyed within the day theyโ€™re made, but leftovers keep well in an airtight container in the refrigerator for up to 3 days, or in the freezer for up to 2 weeks. To reheat, pop them in the air fryer at 350 F for 3 to 5 minutes, or until heated through. Thaw frozen mushrooms in the refrigerator overnight before reheating.

If making ahead, you can stuff the mushrooms up to 24 hours in advance. Place them in an airtight container in the fridge and just air fry when ready to serve.

What to Serve with Air Fryer Stuffed Mushrooms

Air fryer stuffed mushrooms can be enjoyed as is, but even more delicious paired with a wide variety of dishes. Pair them with your favorite cocktails at parties – we love them with an electric lemonade or a sangria

Enjoy them with your favorite salad or soups like French onion soup or Outback potato soup. For a heartier option, serve the mushrooms as a starter to your mains like herb-crusted chicken or pineapple teriyaki pork chops.
