Baking a loaf of bread has never been this easy. It will only take you 15 minutes tops to prep and your bread machine will do the hard work like mixing and baking. I also love that this recipe uses easy-to-find ingredients. I can make zucchini bread whenever I crave it because I have all I need right in my kitchen.

Step-By-Step Instructions

While this recipe only requires 15 minutes of active time, you’ll need to wait 2 hours for it to bake to perfection. I don’t like this part, too, but I promise you that the waiting time is worth it!

  1. Remove the bread pan from the bread machine. Add the eggs and butter to the bread pan.
  2. Whisk the flour, sugar, baking soda, baking powder, cinnamon, and salt together in a mixing bowl. You can add these ingredients directly to the machine, but there’s a high risk of uneven mixing and you’d end up with a lumpy dough. This is a small extra step but ensures a nice finish with minimal added effort. Then, pour the dry mixture over the wet ingredients in the bread pan.
  3. Insert the bread pan into the machine. Turn the machine on and select the QUICK BREAD or CAKE cycle. If your machine allows, choose a light or medium crust setting.
  4. Start the bread machine and allow it to mix the ingredients into dough before folding in the zucchini and walnuts after the first mixing cycle. Use the ADD-INS alarm if your model has one.
  5. Secure the lid and leave the machine to complete the cycle.
  6. Once baked, carefully remove the bread pan and cool it on a wire rack. Leave the bread in the pan for about 10 minutes before tipping it out and letting cool completely before slicing.

They also contain fewer seeds and less water, which helps prevent the bread from becoming too watery or mushy.
  • Know Your Bread Machine: This recipe is suitable for a 1.5 or 2 pound capacity bread machine. However, capacity and cook time vary depending on the unit used. It’s important to check your specific machine’s user manual to select the correct cycle. Older machines may not have a QUICK BREAD cycle. Do not confuse it with a RAPID cycle, which is intended for yeast-based sandwich bread. The cycle you use should not have a rise time. Using the wrong setting may result in undercooked or overcooked bread.
  • Add Ingredients In Order: Add the liquid ingredients to the pan first, then dry ingredients next. This is the ideal order for best mixing.
  • Be Creative With Mix-Ins: This zucchini bread is highly customizable – add in your favorite nuts, some chocolate chips, or even dried fruit if you want to. How to Store This Recipe

Zucchini bread is a “quick bread” similar to banana bread, and should last 2 to 3 days at room temperature, 3 to 4 days if placed in a tightly sealed container. However, I recommend that you place your bread in a plastic bag or an airtight container then store it in the fridge. It will keep for about a week.

You can also freeze your homemade zucchini bread – it can last for 2 to 3 months! If you have a surplus of zucchini, you can make a few loaves, wrap them tightly in plastic wrap or foil, place in an airtight container then stash away in the freezer. When you’re ready for a loaf, just thaw at room temperature, slice, and enjoy!

While I enjoy a slice or two of zucchini bread, I often pair it with a hot cup of matcha or an iced coffee, depending on my mood. I’m amazed at how versatile this tasty treat is!
