Combine the flour, baking powder, and pumpkin pie spice together in a medium bowl. Whisk the eggs, milk, pumpkin puree, brown sugar, and butter in a separate bowl.
Fold the wet ingredients into the dry ingredients. Continue gently until just combined. Do not over mix; leaving a few lumps is fine. Fold in the pecans.
Plug in and preheat the waffle iron. Spray with cooking spray if needed. Then cook according to the manufacturer’s directions.
Serve with optional whipped cream, additional pecans, and maple syrup.

Notes
Let the eggs, milk, and butter come to room temperature before mixing for a smoother batter.
Once out of the waffle iron, transfer the waffles to the oven and keep them on a low heat until you reach your desired crispiness.
Stir the wet and dry ingredients together just until combined. Overmixing can make the waffles dense and tough.
Get creative with toppings - mix and match your favorites according to your mood. Peanut butter, Greek yogurt, caramel drizzle, and fresh fruit are great choices.
Serve: Serve waffles with whipped cream and syrup, fresh fruit slices, or meats like ham, bacon, or breakfast sausage for breakfast or brunch. Top with a scoop of ice cream for dessert or enjoy with hot or cold coffee or tea for a filling snack.Store: Transfer batter to an airtight container and store in the refrigerator for up to 3 days. Place cooked waffles in a freezer-safe container and freeze for up to 2 months. Reheat in a toaster for 3-4 minutes over medium heat or in the oven for 3-4 minutes at 350 F.
