Notes
Taste and adjust! I always recommend tasting while cooking so you can get to know the dish and adjust the seasoning as you like best.
Start with high-quality mayonnaise - The main ingredient in this recipe is mayonnaise, so choose a high-quality brand or make your own at home. The mayo is a lot looser and pliable when at room temperature.
Avoid Lumps - Add spices and seasonings on top of the mayonnaise while mixing. This will help avoid lumps.
Allow flavors to meld - For best results, let your spicy mayonnaise sit for 15-20 minutes before using.
Short cut - with mayo, favorite hot sauce, and vinegar. Start with 1 tbsp hot sauce and ¼ tsp vinegar. Taste and adjust with more hot sauce as desired.
Too hot? Cool it off with a bit of sugar. Add 1 tsp of granulated white sugar at a time. You can also dilute the batch with more mayo until it’s more palatable.
